Mango Chili Salsa


3 ripe mangoes, peeled and diced
1 red bell pepper, diced
½ red onion, diced
¼ cup packed fresh cilantro leaves, chopped
1 chili pepper, seeded and finely diced
¼ cup lime juice
salt to taste


Toss all ingredients together.

Serve with Red Snapper in Banana Leaves

To prepare ahead:

The salsa can be prepared the night before your party.  It will be more vibrant if you wait to add the chopped cilantro at the last minute.
